Neopalitan Cupcakes

I love to bake. Of coures I love to bake even more now that pinterest is around. I was looking for a good cupcake recipe a few months back, and found some I liked but they weren't quite what I was looking for. So I combined two recipes into one and created these below. Let me just say they have been quite the hit, as I've made them three times now, and have passed the recipe on to several people. Enjoy!! They are quite delish!

Ingredients
1 pkg. Brownie Mix
1 pkg. Yellow Cake Mix
Eggs
Vegetable Oil
Sour Cream
Powdered Sugar
Butter
Water
Buttermilk
Vanilla
Cream Cheese
Frozen Strawberries

Preheat oven to 350. Line muffin tins with cupcake liners. For first step combine one box of brownie mix, 2 eggs, 1/2 cup vegetable oil, 1/4 cup water. Mix all ingredients until completely incorporated, make sure to not over mix. Spoon brownie batter into cupcake liners and fill about 1/3 full.



For next step combine in large bowl- 2 eggs and 2 egg whites, 1/3 cup vegetable oil, 3/4 cup buttermilk, 3/4 cup sour cream, and 1 teaspoon vanilla. Sift in one box of yellow cake mix and combine all together. Spoon yellow cake mixture on to brownie batter filling remainder of muffin tins, about 2/3 way full.




Bake cupcakes for 20-22 minutes and remove. Let cool completely before frosting.

For frosting, beat one cup butter, softened and 8 oz. of cream cheese until mixture becomes light and fluffy.



In a blender add 1/4 cup frozen strawberries, thawed and a tad bit of water, blend until smooth. Add 1/4 cup strawberry puree to frosting and mix well. Gradually add in 4-6 cups of powdered sugar.


After cupcakes have cooled I usually add frosting to a large gallon ziplock bag and cut a small snip out of the corner and pipe frosting onto cucpakes. Enjoy!
